Costa Rica Finca La Chumeca Anaerobic Natural
Finca Santa Maria has a deep-rooted history spanning over 50 years. Located in the Andes Mountains in the Buesaco region of Nariño, this farm, which produces high-quality coffees, was purchased by Armando Benavides from a retired pilot in the 1980s. Since then, he and his family have meticulously cared for and cultivated this land.
San Pablo, the capital of the León Cortés Castro canton (former President of Costa Rica), is located in the mountainous region of Costa Rica known as the Los Santos Zone. This region, renowned for its coffee-growing tradition, was settled by families from the Central Valley in the 19th century. The León Cortés canton was officially established in 1962, and since then, San Pablo has served as its administrative, economic, and cultural center.
La Chumeca was founded in 2014, but Don Martín cultivated coffee in Costa Rica his entire life. At that time, a need for change in traditional coffee farming arose, as the results obtained by the business were not very promising. Thus, they decided to process their own coffee; it was from that moment on that everything took on a new and different direction.
At La Chumeca, a family-run micro-mill, Don Martín, his wife Olga, and their children work shoulder-to-shoulder every day. Since 2016, they have been conducting various fermentation methods and experiments that allow them to shape the final flavor profile in the cup without adding any external substances or products to the process.
La Chumeca has five different lots in the Los Santos coffee growing region. Each lot is processed separately and is fully traceable, resulting in diverse product groups and distinctly different taste profiles.
Approximately 25 different lots of coffee are processed each year, depending on the farm, processing method, and variety. The varieties worked on include Red Catuai, Yellow Catuai, CR-95, Mocka, H-17, H-3, Caturra-Catuai, and Geisha enano. The processing methods used are Natural, 777 Natural Anaerobic, and Capulinero Natural Anaerobic.
